Empanadas -Chilean recipe

The empanada is a traditional turnover pie. The variations are as follows: de horno-baked, frito-fried, de
pino-with a meat and onion filling, de queso-cheese, de mariscos-seafood. This is a Chilean empanda recipe
that you can learn to make the empanada dough and the filling. You can also substitute the beef for another to your liking.



Ingredients:

Empanda dough:

• 3 Cups all-purpose flour
• 1 Teaspooon Baking powder
• 1 Teaspoon of salt
• 1/4 Cup Lard or shortening
• Milk, water or broth 1/2 to 3/4 cup, as needed

Filling:

• 2-3 Tablespoons of oil
• I minced onion
• 2-3 clove minced garlic
• 1 Pound of ground beef
• 1 Tablespoon of Paprika
• 1 Teaspoon of Cumin seed
• 1 Teaspoon of Oregano
• 1 cup vegetable stock
• 1 Tablespoon of Flour
• 1/2 Cup raisins
•1/4 Cup Black or Green pitted Olives, chopped



Preparation:

Mix flour, baking powder and salt together in a large bowl. Rub the lard or shortening into the flour with your fingers to break it up into small pieces. If oil, stir it in.
Stir in just enough milk, water or broth to form a kneadable ball. Remove it to a floured board and knead for about 5-10 minutes until it is silky smooth. Add a little flourto make less sticky. Cover it with a towel or bowl and let it rest at least 30 minutes.
Heat the oil in a saute pan over medium flame. Saute the onions until they turn translucent. Add the garlic, paprika, cumin and oregano and sautÈ 1-2 minutes more. Add the ground beef, salt and pepper and saute, breaking up the beef until it is cooked through.
Stir in the water or stock, raisins and olives and bring to a simmer. Sprinkle flour over all and stir in well. Simmer for another 5-8 minutes till thickened. Adjust seasoning, remove from heat and set aside to cool.
Preheat your oven to 375∞F. Cut the dough into 12 equal portions. Lightly flour a work surface and roll each portion into a 6- to 8-inch round. Add about 1/4 cup of filling to the center of the pastry round, leaving a 1/2-inch border. Wet the edges with a finger dipped in water, fold over into a half moon and seal the edges with the tines of a fork or by rolling them up into a scalloped edge. Lay out on a baking sheet.
Brush tops with an beaten egg whites. Bake for 30-40 minutes till browned on top.

Carrot Cake- Low-fat version recipe


We are on a sugar craze now, with all these desserts, but this carrot cake recipe is Low-fat and saturated fat, by substituting whole eggs with eggs whites. Great tasting with the spices, applesauce, and carrots. You can chop up some raw walnuts and place on the frosting of the cake, for decoration and crunch.



Ingredients:

• 1/4 Cup Raisins
• 3/4 Cup confectioners sugar
• 1/3 Cup Applesauce
• 2/3 Cup Sugar
• 1/2 Teaspoon Vanilla extract
• 1/8 Teaspoon Ground cloves
• 1 Teaspoon cinnamon
• 1/2 Teaspoon skim milk
• 1/2 Teaspoon baking soda
• 1/4 Teaspoon nutmeg
• 1/8 Teaspoon salt
• 1 1/4 Cups Flour
• 1 2/3 Cups carrots, grated
• 3 Tablespoons Non-Fat Cream Cheese (tub container)
• 2 Tablespoons margarine
• 1 1/2 Teaspoons baking powder
• 3 Egg whites

Directions:

Preheat oven to 350°F. Vegetable spray a 8" x 8" non-stick baking dish, set aside.

In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt.

In a large bowl, cream together the sugar and margarine or butter. Using an electric mixer, beat in the egg whites and applesauce until well-blended. Add the flour mixture and beat, stopping once to scrape down the bowl, until just combined. Stir in the carrots and raisins.

Pour the batter into the prepared dish and smooth it evenly. Bake for 30 to 35 minutes, or until the top is lightly browned. Allow cake to cool completely.

Frosting: Sift the confectioners' sugar into a medium bowl. Add the cream cheese, skim-milk and vanilla. Blend until smooth. Spread frosting on cooled cake.

Chocolate Angel Food Cake - dessert recipe


Cocoa added to the traditional angel food cake recipe gives it a great flavor. This is a a low-fat cake, because there is no oil or butter, but it is still a moist cake. If you are not worried about calories make a batch of chocolate frosting for your cake like shown here, or serve with fresh strawberries for a lighter version.

Ingredients:

• 1 Cup cake flour, sifted
• 1/4 cup unsweetened cocoa powder
• 1/2 Teaspoon Almond extract
• 1/4 Teaspoon Salt
• 1 1/4 Cups Sugar
• 1 1/2 Teaspoons Vanilla extract
• 1 1/4 Teaspoons Cream of Tartar
• 12 Egg whites, room temperature


Directions:

Preheat the oven to 350°F.

Sift the flour with 1/2 cup of the sugar and cocoa three times. Set aside.

In large bowl, combine egg whites, cream of tartar, and salt, beat with mixer until the egg whites form soft peaks. Gradually beat in the remaining sugar, 1/4 cup at a time. Add vanilla and almond extract, and beat until glossy.

Gently fold the flour mixture into the egg white mixture in 3 stages, folding just enough to mix each time. Pour the batter into a non-stick 9" or 10" tube pan and smooth the surface of the batter evenly.

Bake 40 to 45 minutes, until golden brown. Turn the pan over the top of a heavy long-necked bottle and let cool for a couple of hours. Gently remove from pan and place on serving dish.

Chipotle Chile recipe

This chipotle chile has a great spice and is hot and filling. It's lower in fat than most chili's because it is made with ground turkey, and low-fat cheese. If you prefer to use beef you can substitute with a ground sirloin. Dip into a bowl of chipotle chile with corn chips, tastes great.

Ingredients:

• 1 green bell pepper, cored, seeded and chopped
• 1 small onion, chopped
• 2 Teaspoon canola oil
• 1/2 Teaspoon chili powder
• 1 Teaspoon salt
• 1 Lb. ground turkey breast
• 1- 15 oz. can tomato sauce
• 1 -15 oz. can kidney beans, don't drain
• 1/2 Teaspoon canned chipotle pepper, minced
• 1/2 Cup shredded reduced-fat cheddar



Preparation:

In a saucepan, sauté bell pepper and onion in oil over medium heat 5 minutes. Add turkey stirring, about 5 minutes. Add tomato sauce, kidney beans, seasonings, and chipotle. Stir all ingredients well. Increase heat, stirring, until mixture comes to a boil. Reduce heat and simmer, uncovered, for 15 minutes. Serve with cheese sprinkled on top. Make 4 servings.
