Bean Salad - Salad Recipe

This salad recipe, which includes beans; add soluble fiber to your diet and are high in protein, and complex carbohydrates. A cup of cooked beans provides about 9 to 13 grams of fiber. Studies have shown that soluble fiber can help lower blood cholesterol. Beans also have a low glycemic index, which means your blood sugar will not spike up, plus you won't feel hungry afterwards.


Ingredients

1 15 oz. can green beans, rinsed and drained
1 15 oz. can wax beans, rinsed and drained
1 15 oz. kidney beans, rinsed and drained
1 15 oz. can garbanzo beans, rinsed and drained
1/4 Cup white onion, chopped
1/4 Cup orange juice
1/2 Cup cider vinegar



Preparation:

In a bowl, combine the beans and onions. Stir gently to mix evenly.

In a separate bowl, whisk together the orange juice and vinegar. Add sugar substitute for desired sweetness.

Pour the orange juice mixture over the bean mixture. Stir to coat evenly. Let stand 30 minutes before serving.
Serves 8.
