Banana Bread Recipe

For the best tasting banana bread use the ripest bananas, they are the sweetest at this time. This recipe is lower in fat than most banana bread recipes because it substitutes some oil with buttermilk. Bananas are a valuable source of vitamin B6, vitamin C, and potassium, which is calming.When your stressed out bake a loaf of this low-fat banana bread instead of reaching for those processed baked goods. Besides, nothing tastes better than homemade. I added some Butterscotch chips to the top of this loaf for an extra sweet.



Ingredients

• 2 Large eggs
• 3/4 Cup sugar
• 1 Cup mashed ripe bananas (about 3 medium)
• 1/3 Cup buttermilk
• 1 Tablespoon vegetable oil
• 1 Tablespoon vanilla extract
• 1 3/4 Cups all purpose flour
• 2 Teaspoons baking powder
• 1/2 Teaspoon baking soda
• 1/2 Teaspoon salt



Preparation:

Preheat oven to 325°F. Lightly grease 8 1/2x4 1/2x2 1/2-inch pan; dust with flour. With an electric mixer; beat eggs and sugar in large bowl until thick and light, about 5 minutes. Mix in mashed bananas, buttermilk, oil and vanilla. Sift flour, baking powder, baking soda and salt over banana mixture; beat until just blended. Pour batted in to a prepared pan. Bake until golden brown, about 1 hour Cool on baking rack.
