• 1/2 English cucumber, sliced
• 2 Tomatoes, diced
• Handful of parsley, chopped
• 1/2 Red onion, chopped
• 2T Extra-virgin olive oil
• Salt and pepper to taste
Toss all the ingredients in a bowl and garnish with vinegar, oil and salt and pepper to taste.
