Need a salad and fruit fix, this salad recipe will satisfy you, and Kate Hudson would probably enjoy this Pineapple Chicken salad too! For this recipe you will need chicken breasts, which is a lean protein that will help keep you full and lean like this star body. The pineapple in this recipe will supply your body with vitamin A and C. It also contains a enzyme called Bromelain, which helps in the digestion of protein. Another benefit of pineapple is it is rich in the trace mineral manganese, which helps to build healthy bones and connective tissues. This will keep you running on the trail longer, with the ease to your knees. Another plus it pineapple will satisfy a sweet tooth, without saturated fat.


Pineapple Chicken Salad

Ingredients:

• 4 boneless, skinless 4 oz. chicken breasts
• 1 T Olive oil
• 1 - 8 oz. can unsweetened pineapple chunks, drained, except for 2T of juice
• 2 C Broccoli florets
• 4 C Fresh baby spinach leaves
• 1/2 Red onions, sliced thinly

Vinaigrette Dressing:

• 1/4 C Olive oil
• 2 T Balsamic vinegar
• 2 t Sugar
• 1/4 t Ground cinnamon

Preparation:

Cut chicken breast into cubes. In a nonstick frying pan, heat the olive oil over medium heat. Add chicken and cook until golden brown, about 10 minutes.

In a large bowl, combine cooked chicken, pineapple, broccoli, baby spinach and onions.

Whisk olive oil, vinegar, 2T pineapple juice, sugar, and cinnamon in a small bowl. Pour over the salad, and toss. Serves 8.
