Bean and Tuna Salad - Kid's Recipe

This is a protein rich kid-friendly recipe that includes beans. To introduce new foods to kids, encourage them to eat at least three bites of any nutritious food before rejecting it. Don't force children to clean their plates or use food as a reward. Most children will regulate their intake, as long as they have plenty of nutritious whole foods. Children will enjoy this recipe, plus it's fast; 20 minutes prep time, and easy to prepare.


• 1 15 oz. can Cannellini or Butter beans, rinsed and drained
• 2 Small tomatoes, diced
• 1 3 1/2 oz. can Tuna in water
• 4 oz. Green Beans, cooked and cooled
• 1 Tablespoon Red wine vinegar
• 2 Tablespoons Olive oil
• Fresh Chives or Parsley


Mix beans, tomatoes, tuna, and green beans in a bowl. Combine the vinegar, oil, and herbs in a small bowl. Add to the bean mixture and toss. Serves 4.
